One particular one stands out to me the old EQ level sound..it mean so much because it was so Bloody hard to obtain.

Generic: Automatic weapon (blaster, slug-thrower) fire... it's like MUSIC man.

Specific: The snap-hiss of a lightsaber (SWG). It was epic when my PRE-CU Jedi made his first one.

The Chronicles of Spellborn had the best BGM & ambient sounds bar none. They were simply amazing at capturing the atmosphere and turning it into sounds. I still have them all somewhere but it's sad we won't ever see that game again.

The combat sounds in TERA, in particular the heavy clashing of metal.

The buffing sound effects in AC.. heck, most of the AC sounds stood out.

The UI sounds in Guild Wars character creation/selection, when i get to the height adjustment step, i always toggle it a bit up and down, just to hear that sound. Its silly but i like it. :)

WoW also has fantastic UI sounds. Im actually quite fond of UI sounds, i don't know why.

I love games where the bird songs change between zones. You can tell where you are by listening.

I love wind in the trees - not just the white noise of leaves, but the creak of branches.

I love it when the sun goes down and the sound of birds fades before waves of cricket song.

I love that in LoTRO, most zones have different music at night.

I get nostalgic when I hear sound effects recycled from other games I've played. There was a certain bird call from Asheron's Call 1 that's reused in Rivendell and Enedwaith in LotRO. I always notice it.

I love the server message sound in Rift. It reminds me of the 'train arriving' chime they have in Japan. I also like the sound horses make in Rift as well, because it's not just clopping hooves; it's the sound of your tack shifting and bouncing as well. I thought it was an amazing detail.

I think COH has some of the best sounds
It really gets you into the combat when your powers all make different sounds like when my martial arts scrapper kicks enemies or my SS brute smashes things and always liked that radiation snipe sound or the thunder zaps of my storm cloud. The sounds in that game really stand out and stick in your head I can still hear them and i havnt played the game in a long while lol

The clinking and crumbing sounds from all directions as the miners work the depths of EverQuest's Torgiran Mines.

The soft acoustic music in Combe/Archet in LOTRO. It instantly relaxes me.

Music in EVE is great too. I don't hear the turret sounds very often, but when I am zoomed in enough a 1400mm Artillery Canon firing sounds pretty epic.
