I always enjoy doing trivia in general or regional chat. It's easy enough to simply say "5 blue chips for each correct answer" and keep a notepad next to yourself to write down the names of people who answer correctly and how many answers they've gotten. I try to ask questions from a wide range of topics to make it more interesting to everyone paying attention and harder for one person to answer them all. Sometimes it seems like only a dozen people are paying attention or answering until you ask a question about what does the "BMT" in a BMT sandwich from Subway stand for and someone who has been silent the whole time answers.
I like to have at least 10-15 questions ready before doing a trivia event and think of more while doing it (and sometimes people will PM with a good question to ask). Really the hardest thing is trying to think of questions that can't be easily answered why someone alt-tabbing over to their internet browser and googling it :-/
