Also: I hope that there will be more than one type of ship per class to choose from. Though the two they showed looked awesome.

I think it's safe to bet that there will be one per class at launch with some limited ability to customize your ship. If players ask for it, I'd bet we'll see Bioware add more ships and customization options that players will be able to buy or otherwise acquire.
