You know, I can relate to that WoW guy wanting to play FFXI. I too am a WoW veteran with several 80s that wants to go back and at least get a capped level job in FFXI. Mind you my first MMO was Dark Age of Camelot and I played FFXI before starting WoW back in 2005. I have no illusions as to how much of group required grinds it is. Problem was I got frustrated with grouping in Valkrum Dunes the first time around and gave it up after several weeks. I feel like now I might have more patience for getting through it. That and I feel like I can weather the storm from people who might not have the patience for someone actually being new (again) to the game.

Luckily for you, the game has changed quite a bit. It is now feasible to solo through most of the level grinds now. While party exp is still the quickest way, it isn't the only way to level grind in FFXI any longer. I think the main problem you might have is getting through the hurdles of the game's missions that are required to access end game areas.
