I used to wonder about that also, when I started playing back in the day, until I realised it was a nicely designed feature to ensure the in-game economy remained healthy.

ie: by preventing you being completely self-sufficient (in terms of crafting) it instead forces you to rely upon the output of other crafters for most of the time, which is great.

There's effectively always a market (financially and socially) for your goods, as a result.
