Some important notes about Apothecary crafting; Water acts as a stabilizer. Using two of the water available from the merchant will most often make the beginner potions stable, and are pretty cheap. Also, you don't have to fill in all three optional slots, all that is required is a potion vial and a main ingrediant to try and create a potion. However, you will need at least one stabilizer to have any chance for it to succeed.

Also, for higher potions, using a Higher quality vial can act as a stabilizer, and sometimes if you just want a stable potion you can use 3 waters. It's as if there's a set threshold for when a potion becomes stable, and the vial you use add's X amount of stability, and each water ads X amount of stability, etc.

I've also noticed that the low level quantity increasing materials require more than one of that material to actually increase the potion out put, while the duration increasing materials only require one. For making early double water stable concoctions, this makes it easier to increase the duration than the quantity and still remain usable.
