I think the issue here isn't the advantages melee and casters have over each other, but that as Gitr points out, PvE in WoW isn't treated the same as PvP.

In PvP, everyone's spells can be interrupted because everyone's player controlled but the balance of melee vs. caster you're referring to is still maintained. It isn't a matter of melee's vs. casters, it's that player casters are vulnerable to having their spells interrupted, a mechanic that NPC's are exempt from simply to provide a false sense of challenge for the player when it's really just a quick-fix double-standard.

Well, I know in DAoC you could interrupt enemy casters with a few exceptions. Usually a boss encounter is the only thing that can't be interrupted.
